I Can’t Stop Eating These Ugly S’mores Brownies



These s’mores brownies are loaded with buttery graham crackers, sweet marshmallows, and smooth milk chocolate! The marshmallows melt into the batter and make for a wonderfully gooey texture.

Ingredients
Base layer
3 Tablespoons salted butter, melted (42g)
7 full sheet graham crackers (see note)
27 marshmallows, cut in half widthwise
Brownies Layer
1 ¼ cups granulated sugar (250g)
2 large eggs, room temperature preferred
1 teaspoon vanilla extract
½ cup unsalted butter, cut into 8 pieces (113g)
½ cup natural cocoa powder (50g)
½ cup all-purpose flour (63g)
¼ rounded teaspoon table salt
3 1.55 oz Hershey’s milk chocolate bars (129 g)
Topping
1 1.55 oz Hershey’s milk chocolate bar (43 g), for topping
1 graham cracker, broken into pieces, for topping.

Instructions
00:00 Introduction
00:16 Preheat oven to 350F (175C) and line a 9×9 (23x23cm) baking pan with parchment paper.
00:20 Use a pastry brush to brush melted butter onto both sides of your graham crackers. Layer evenly into the bottom of your prepared pan.
01:33 Place marshmallows in an even layer across the graham crackers to fill the whole bottom of the pan. Set aside.
03:23 In a large mixing bowl, vigorously whisk together the sugar, eggs, and vanilla until very well combined and lightened in color.
04:33 In a separate small bowl, melt the butter. Immediately whisk in the cocoa powder until smooth and combined.
05:30 Add butter/chocolate mixture to sugar mixture and stir to completely combine.
05:47 Add the flour and salt and mix until combined.
06:37 Stir in 3 chopped chocolate bars (129g).
07:20 Dollop brownie batter over marshmallows and use a spoon or spatula to gently spread batter into an even layer, covering the marshmallows.
07:54 Scatter remaining chopped chocolate bar (43g) and 1 sheet of broken graham crackers over the top of the brownie batter.
08:50 Bake in center rack of 350F (175C) preheated oven for 35-40 minutes, note that a toothpick won’t come out clean when it’s finished baking and the brownies will still seem very fudgy. If you prefer, temp it with an instant read thermometer, temperature should exceed 165F (74C).
09:30 Allow to cool completely before enjoying.

Notes
Graham Crackers
You will need enough graham crackers to evenly layer the bottom of a 9×9 pan, I usually use 7, breaking up some to fit nicely.
Storing
Cover tightly and store at room temperature for up to 3 days.

  1. I can’t wait to try these!! Also, I’ve been making your best chocolate chip cookie recipe for almost a year now and it never disappoints. I’ve recently started to half the recipe and I was wondering, do I literally just half all the ingredients or would I have to change some of the measurements because I feel my dough was a little more runny when I did half it? Thanks so much!!

  3. Ok, so…. I love everything you make. And obviously everyone likes different things. And that's ok. Who am I to judge? But if there is ANY hill I will die on when it comes to sweets, it's this: Graham crackers, marshmallows and chocolate have NO business living communally! They should have separate houses. On separate streets. In separate cities! 😂 I will give this video a thumbs up, lol but I will NOT like it! 😉 NOW, I'm going to go make something normal to eat. Like a peanut butter and pickle sandwich. 😂 (I hope you take this with the lighthearted teasing that I'm intending! Well, except the peanut butter and pickle thing. Yes, I eat those. And yes, I know how gross it sounds! 😂)

  4. I made these after seeing the video because they looked so tempting! They turned out good, but not something I’d personally crave. They looked beautiful coming out of the oven, but once I cut them, I understood why you mentioned they aren’t the prettiest.

    For my taste, they were a bit too sweet, and I felt they were missing that classic s’mores flavor, even with the graham crackers. I prefer a balance of sweet and salty, but everyone’s taste is different. Thanks for sharing the recipe!

    am i also going to sub oreo thins for the graham crackers and "enjoy life" chocolate chunks for the hershey's? also yes.

  6. Ok, but hear me out: gently press mini marshmallows on the top of the warm, baked awesomeness for those of us who are insane about marshmallows. I’ve found that mini Dandies marshmallows stand up to applications like this better than other brands. 😋

  7. Funny thing, I highly prefer things like s’mores brownies and pie to actual s’mores. I’ve never found original s’mores anything special unless the marshmallows are extra melted and toasted.
