Take the salt off after dry brining… then re season if you want salt and pepper. Why? Takes the moisture off the steaks and gives a better crust when pan frying

Hey man, dry brining definitely makes the salt to penetrate and the crust is much better, but i got two steaks from the same cut, ate one now and the other i dry brined it for tomorrow, and the steak that i dry brines felt a lot more flavorful but felt really dry, like it didnt got any juice at all, and it was only for 4 hours, did i do something wrong?
Used coarse, fine, Kosher, sea and regular salt, always comes out like a saltlick in a pasture. Maybe leaving it for an hour or under would do better for taste.

Pat it dry. Salt it heavily. Leave it uncovered in the fridge for 2-3 days.
It takes a good steak and turns it into a great steak.

Honesly I hate the phrase "locks in the juices/moisture" when it comes to cooking, especially when it comes to meat. It makes no sense whatsoever.
Last two times i did some steaks in my cast iron pan i dry brined them at least 24hrs. Came out excellent 💯

Edit: I season it 24-48 hours before i cook it as well. Small splash of worchestire, and on the other side a small splash of balsamic vinegar. Seasoning.

The point of the salt is to draw OUT the water.. wash it off and pat completely dry to ensure a good sear.
