Cooking Through a 24-Hour Firehouse Shift | On the Job | NYT Cooking

What do firefighters eat on a 24-hour shift? In this episode of “On the Job,” Priya Krishna takes us inside the kitchen of a firehouse in Jersey City, New Jersey, where Pete Gonzalez cooks elaborate meals for his fellow firefighters.

Everyone pitches in. Even if they’re not cooking, they’re washing dishes, prepping ingredients or mopping the floor. At any moment, a meal can be interrupted. When a call comes in, burners are switched off and the kitchen empties in seconds. Later, firefighters wander back in, peeling off their gear, shaking off adrenaline and sitting down as if they’d never left.

“That’s why we take these meals so seriously,” Gonzalez said. “It could be our last meal together. It could be just your last meal in general.”

  1. You’re saying that this fire company is sending actual firefighters to buy their ingredients, with the damn trucks? And now we understand this expanded out to all our fire companies across the country. A: we need to wake up and realize what a poor situation this is. B: in the meantime, these guys should have plans set up, don’t be so of the cuff. OMG what a mess

  2. Plenty of fire out west ….firefighters are losing their lives Trying to fight those fires out there…. maybe a little less focus on recipes……

  3. Having a son who is a firefighter / paramedic, this one hits home. A 2nd family for the individuals at the station! All of this hits home and I understand. God speed to all of this station's crew!
