Full written recipe:
INGREDIENTS:
1½ lb (680 g) ground beef, 85/15
3 tbsp olive oil
1 large yellow onion, diced
1 medium red bell pepper, diced
4 garlic cloves, minced
1½ lb (680 g) Yukon Gold potatoes, cut into ½-inch cubes
1 can (15 oz / 425 g) pinto beans, drained
1 can (15 oz / 425 g) kidney beans, drained
1½ cups (250 g) frozen sweet corn
1 can (14.5 oz / 410 g) diced tomatoes, with juices
½ cup plain tomato sauce
4 cups (950 ml) low-sodium beef broth
1 tbsp Worcestershire sauce
2 tsp chili powder
1½ tsp smoked paprika
1 tsp ground cumin
½ tsp dried oregano
1 tsp salt, or to taste
½ tsp black pepper
½ cup (50 g) shredded cheddar cheese
Chopped fresh parsley or green onions, for serving (optional)
HOW TO MAKE IT:
Heat the olive oil in a large pot over medium-high heat. Add the ground beef and cook for 6–8 minutes, breaking it into medium-sized crumbles, until nicely browned. Spoon off any excess grease if needed.
Add the onion and red bell pepper and cook for 4–5 minutes, until softened. Stir in the garlic, chili powder, smoked paprika, cumin, and oregano. Cook for another 30 seconds, until fragrant.
Pour in the beef broth, scraping up the browned bits from the bottom of the pot. Add the potatoes, salt, and black pepper. Bring to a gentle boil, then reduce the heat, partially cover, and simmer for 8–10 minutes, until the potatoes begin to soften.
Stir in the diced tomatoes with their juices, tomato sauce, and Worcestershire sauce. Bring back to a gentle simmer and cook for another 2–3 minutes.
Add the drained pinto beans, kidney beans, and frozen corn. Simmer uncovered for another 8–10 minutes, until the potatoes are completely tender and everything is heated through.
Turn off the heat and stir in the shredded cheddar until melted. Taste and adjust the seasoning.
Ladle into bowls and finish with fresh parsley or green onions, if you like. Grab some bread and enjoy that rich, savory broth! 😋

carrot? PEPPER!
Is this meant to be a tex-mex sort of soup? I don't know if I should emphasize tomatoes or "taco" flavors.
