What is the name of the extra she talked about?

Help! It isn't going past 100° for me! The thermometer goes up to 300 but it's been stuck for like five minutes! What now??
So look.
I tried this 2x and failed both.
My thermometer is an oldschool one with all the labels and stuff. But for some reason it wasn't reading correctly. The mix was way hotter than the gauge said. That is how I burned it. And it was actually cool as fuck cause it went from this nice clear mix that's like 99% slow moving bubbles to brown burnt shit in literally an instant. I added more water and cleaned my pan.
2nd try I poured the water in with the sugar when it was hot and it caused it to bubble and crystallize to early, yet I still melted it down. Got to the right temp, too it off the heat and added koolaid (I read a comment that said you could flavor it with that so I did. Poured it out, and while it was cooling, I tasted it and it tasted like shit.
What did I do wrong? Especially with the koolaid one, cause it tasted like koolaid with no sugar and was real bitter.
I’m going to try to make mine with tea
Lots of fake comments and absolute diabetes💀
