Dubai is very hot for most of the year, so they stay indoors in home/school/office during the day and come out only at night.
Hence the shops are open until very late – Dubai Mall used to be open until 3am before COVID.
For Arabic countries that work 7am to 3pm, they usually nap until 6-8pm, party until 1-3am, sleep until 6am, then go office again.
But a lot of Dubai offices have more normal working hours of 9-6, even though the locals tend to go back after lunch or mid-afternoon to nap, while expats continue working.

Just 4 days is far too short. I resided in Dubai for 1.5 years and still don't completely tour around. Oh yes Salt beef burger range is 👍.
I planned and booked to go in Apr this year then have to cancel. so sad.
