I’m just 8 days away from my first trip to the Philippines, so it was time to try making one of my favorite Filipino dishes — Chicken Inasal! 🇵🇭 I’ve only had Inasal once before, but this time I’m attempting the whole thing from scratch: breaking down a whole chicken, marinating it with calamansi, cane vinegar, patis, garlic, ginger and lemongrass, rendering chicken skin to make homemade annatto chicken oil, making Java rice and sawsawan, and grilling everything over charcoal. My buddy Ricky joins me at the grill as we figure it out along the way, and the final result honestly blew me away. I’m still learning Filipino cooking and have a LOT to learn, but that’s what makes this so much fun. Next stop: the Philippines! 🇵🇭🔥

Hi Austin you can put the spicy pepper in the freezer to keep it freshwheneveer yiu need them it is availablejust in the freezer.
Brotherman just a suggestion next time you make chicken inasal poke the leg quarters with the knife that way the marination would penetrate to the chicken meat and then do it overnight marinate when u start grilling dont put alot of charcoal just get the smokey flavor for about 10minutes or so then stick it in the oven for about 300 degrees until it cooks the inside
You could try to chop the lemongrass, after you smash or osteorized it before marinate it with chicken
Marinate it longer maybe?
