Heated steering is an option – it's available, but just wasn't spec'd on your car. Blame the dealer you borrowed it from!
That car was designed for a Miami Dolphins fan. Not sure if there are any of those left, but hey…Aston has been really good at catering to markets that don't exist any more, so maybe that explains it.
He just needed to hit the manual button to be in manual mode. Like most cars, if you just shift with the paddles, you’re still in automatic.

Technically Miles never truly entered manual mode, there’s a dedicated manual button to lock in manual mode under the shifter
I don't think it's meant to shift for you if you press the manual button on the centre console.

Well, for us refined gentleman, Aston Martin offers the DB12 – without the S. Always fun to see you behind the wheel of a responsive grand tourer. It must be an unusual to see a car the size of an Eldorado able to embarrass sports cars in the twisties. As I recall, Aston Martin is committed to limiting power-operated conveniences per customer preferences. Good to know you found performance qualities that makeup for missing convenience features. This is one of those vehicles that if you had purchased the car for 266,000 and or $381,007 respectively, you wouldn’t actually mind parking it next to another car especially if you were measuring space so that you know how wide to open the door. But I will say that, even though it is a powerhouse on the road, it won’t disturb the neighborhood as long as the engine settles down to a sizable idol.
I really dig the interior. It's a lot, but the color combo is pretty sweet.
