How To Make The Best Smoked Meatloaf Of All Time Kosmos Q One of the first breakthroughs I had as a pitmaster was around how to make smoked meatloaf, and not to brag, but my smoked meatloaf recipe will be the best you’ve ever had in your life I promise you that! Not only is it incredible on flavor, but it’s just an easy meatloaf to make. There isn’t anything overly complicated in this recipe whatsoever. Kosmo’s Dirty Smoked Meatloaf
2lbs 80/20 Ground Beef
1lb Hot Breakfast Sausage
½ lb Fried Bacon (Cut In Little Pcs)
3 Eggs
1 Large Sautéed Yellow Onion
2 Cups Bread Crumbs
½ Cup Maple Brown Sugar
½ Cup Kosmo’s Q Comp BBQ Sauce
¼ Cup Ketchup
3 Tbsp. Dirty Bird HOT
3 Tbsp. Yellow Mustard
2 Tbsp. Worcheshire Sauce
Cut up bacon into 1/8 pcs and fry, set aside to cool.
Cut and Saute Onion in small pcs.
Dump Ground Beef into a large bowl.
Add Sausage and bacon w/ grease.
Dump in everything else and mix by hand making sure not to over mix.
Place into a loaf pan lined with saran wrap and put it into the freezer overnight. Loaf Pan Link:
Remove from the freezer and remove from the loaf pan and place onto a wire mesh rack.
Rub with a light coat of mustard and rub with Kosmo’s Q Dirty Bird Hot.
Cook at 275° to 300° using pecan wood or adding a pecan chunk to your charcoal basket.
Cook to 165° and remove and chow down.

Made these twice now and awesome! Great recipe man.
I made this recipe and it was SO good. The I put smoked guda and provalone in 2 layers (in the middle), fried the onion with 2 serrano peppers, coated the whole loaf with the seasoning. Just incredible, such a bomb of flavor. I doubled the spices and smoked it low and slow for 4-5 hours 250-260. When it hit 160 in the middle, I pulled it and let it rest for a bit. I built it and froze it overnight then into the electric smoker. I put it in around 1pm and by 5:30-6pm it was about ready. I froze it at about 10pm. Everyone seemed to love it, even the kids. Its affordable and produces a lot of slices of goodness. Later in the week I made some enchaladas out of it using the leftover meat mixed with cheese, corn tortillas, and smoked corn with Tajin Twist Sweet & Spicy Seasoning. I take husked corn, remove all but the last layer of the husk, coat the corn with salted butter and shake Tajin Twist Sweet & Spicy Seasoning over it and then put that last layer of husk back on, wrap tightly in foil and put the corn in the smoker during the meatloaf smoking during the last hour or so. Its a simple way to have some great "mexican" corn that can be used with the meatloaf or for other dishes with meatloaf leftovers. !!! IF YOU HAVE A SMOKER, JUST TRY THIS RECIPE !!! I hate meatloaf but Kosmo really knocked this one out of the park!
Can I smoke this and refreeze it and vacuum seal it? To heat in the oven later?

That is so dense it looks like restaurant meatloaf. Add some onion pepper's garlic!!! Even the little shredded carrots to complement with a little Natural sweetness, make it moist and healthy. oh and trash the bacon grease!!

Pro tip, place the loafs on a foil lined pan with raised grates, keeps the smoker clean, a lot of fat will drip

These meatloaves are amazing. Can they be cooked in the oven? I want to make some for a friend with a new baby. She doesn’t have a smoker. This recipe is wonderful and I’m sure it’ll be just as good in the oven, if it’s able to be done.
