How to Use Yeast (Active Dry vs Instant, the Right Way)

How do you use instant yeast versus active dry yeast? 👩‍🍳 Gemma Stafford explains the difference between the two and how to get perfect results every time.

✨ Instant yeast has finer granules, activates quickly, and can go straight into your flour—super easy!
✨ Active dry yeast has larger granules and needs to be dissolved in warm water with a little sugar to “wake it up.”

Either way, both give you soft, squishy bread if used correctly.

  1. I just used bread machine yeast because someone said it can be used in place of instant. I’ve always used active dry. But I got these weird hard tiny spots on top of my rolls? Is that because it didn’t mix well enough in the dough?

  2. I threw away my wrapper and put the yeast into a clean glass container. I feel like it said instant yeast but the granules are big and not fine… 😵‍💫 I'm soaking them and they rise so I'm confused
