Apple managed to not do something stupid, amazing!
Apple has decided to roll back a decision they had announced in June, which would change the structure of “Hide My Email” addresses generated as part of that feature. For as long as the feature’s existed, it would generate @ iCloud .com email addresses, and then that would forward to your main email. So no individual site or app would know your main email and you could track what they do with it. However, they had announced they would start putting Hide My Email addresses on a subdomain. This would make them easily identifiable, and many websites would simply block it, ruining it for many. But fortunately Apple has decided against this dumb move. I’m surprised you have trouble with email being recognized as fake or account specific. You have your own domain, just use ServiceName at that. I’ve never had trouble with that strategy
As someone who works in customer service we can still see the information as long the username is also the same. So the „hide my email“ option is literally plain stupid and only causes trouble.
That's why I have 10 Gmail, GMX and other Mail accounts, some for shopping, some that are connected to my real name somehow indirectly, some that are leading to some fake personas I created that have no connection with any of the accounts where you could dig out some trace back to me. Not because I do something illegal, but I like privacy and that was the easiest way I came up with decades ago, still working like a charm for free. 😂

"Signin with X" is and will always be a trap. If you are banned on the X, you are banned everywhere you did "signin with X". It's not good at all
Isn’t it obvious that the reason was scale? Creating the new subdomain allowed traffic to be sent to a different stack by the router rather than going through a proxy server – with the downside as described in the vid.

I use those aliases to track from where spam starts comming. If website is hacked and leaked data.

email isolation is a great tool just like browser isolation you have to do it.
If a web site requires your email address to look at it they are doing bad things.

i like it when "Hide My Email" actually hides your email and uses the same domain as regular users. but it uses up username space and i think new accounts cannot be made with those usernames.
also, websites might later just block iCloud domain emails anyway, because they really don't care and "normal" users would use another email provider anyway.
I use Fastmail as my external email server. I can create multiple emails very quickly either with my own domain(s) or with one of their internals (tho, some of those are blocked by sites).
