Most cookie recipes call for baking at 350F, but what happens if you don’t? I baked the same cookie dough (my “best chocolate chip cookies” at different oven temperatures so you can actually SEE the difference:
300F/325F — The cookies spread slowly and evenly, they’re more pale, as not much caramelization can occur so the edges are light/not crispy. The flavor is more muted but the cookies are quite soft.
350F (The standard) — This is a great balanced temperature that should leave you with perfectly crisp, lightly golden edges, soft centers, and even spread.
375F — The cookies spread a smidge less and have more golden edges. The center may not cook as quickly as the edges and could be a bit more underdone (or the cookies end up over-done as you try to finish baking the centers in the oven).
400F/425F — Similar to the above, but more dramatic. They spread even less and become more dark. They become overly brown on the outside before the centers can finish cooking. At this temperature and 425F the cookies typically end up more cakey.
Something a lot of people don’t realize is that your oven might actually be lying to you! Many ovens (including my own first oven) run 25-50 degrees hotter or cooler than what the display says. That means even if you *think* you’re baking at 350F, you might actually be baking at 375F (hello thicker cookies) or 325F (hello flat cookies!).
If your cookies aren’t turning out how you expect, it might not be your recipe, it might be your oven! An oven thermometer is the easiest way to fix this, just keep it in the center of your oven (where you do most of your baking) and adjust as needed!

I like 375 degrees for my chocolate chip cookie. Thanks for the info!
It used to be crisco vs. butter , and now this! 😂
I sometimes replace part of my sugar with Allulose which has a faster Maillard reaction. If I do, I usually bake the cookies at 335° F to 340° F. I've seen a professional baker bake their cookies at 275° F, but for nearly double the time. They also let their cookie dough sit in the freezer overnight.
All my, sweets, people would it them off the floor. Thank goodness, I'm allergic to eggs and bakers yeasts. 😂
Good stuff! I’m going to make peanut butter cookies this weekend using your recipes for the cookies and the PB. I have an idea that may resolve the issue that you mentioned with these cookies when homemade PB is used.
Spell check take cup measuring cup away to teach fractions.
Newer oven 325° older oven 350°. Chocolate chip let them set on cookie sheet to finish baking. They will be softer. Also, make sure you use all-purpose flour and baking soda. The soda will assure raising of the cookies. I'm not a chef. I just baked a lot of chocolate chip cookies. I very good way to teach fractions. Take the cup measuring cup. Adding fractions 2 large pizza cut one into half, forths, and eights. The 2nd pizza cut into thirds, and sixth. My son was born prematurely developed mentally delayment. All young children learn better if they get to eat their homework. Less stress with a treat.
Lady, you have patience.
This was so helpful!Thank you
